Recipe: Oregon & Washington Blueberries Cheesecake No-Bake

My no-bake Oregon & Washington Blueberries Cheesecake
inspired by certified dietician Georgen Thye's recipe

"Kiss you each morning, with strawberry skies, 'Cause I get so lost in, Your blueberry eyes.." While listening to this MAX featuring SUGA of BTS Blueberry Eyes song, I am kind of craving for blueberry now.. Let's Grab A Boost of Blue! Since it is now at the peak of perfection season for blueberry, we could always count on Oregon and Washington which are the two top blueberry producing states in the U.S. Owing to ideal growing conditions, these two states offer the best quality fruits that garnered much popularity the world over.

Oregon & Washington Blueberries

Blueberries are naturally sweet, tart and nutritious, making them a beloved superfood. This cute little wonders have huge benefits and are known to be a heart-healthy superfood that is so easy to include in your daily life. The highly versatile blueberries can be enjoyed as it is, a snack, or incorporated into various recipes. They are widely used in salads, baked items, desserts, smoothies, making them a convenient fruit to visually enhance and energise any meal.


This is why I love blueberries, it is so versatile to be my everyday-diet superfood, and also research findings indicate blueberries contain antioxidants and other nutrients that aid our bodies to stay healthy and may help to prevent age-related diseases.



Oregon & Washington Blueberries Layered Cheesecake

Oregon & Washington Blueberries Layered Cheesecake by Georgen Thye

Serves 8
Ingredients:

Crumb Base
๐ŸŒฟ 100g Oatmeal Crackers 
๐ŸŒฟ 60g Melted Butter

Cheesecake Filling
๐ŸŒฟ 250g Cream Cheese
๐ŸŒฟ 150g Plain Yoghurt
๐ŸŒฟ 150g Oregon & Washington Blueberries
๐ŸŒฟ 1 piece Lemon
๐ŸŒฟ 13g Gelatin Powder
๐ŸŒฟ 40g Brown Sugar

Top Jelly Layer
๐ŸŒฟ 200ml Water
๐ŸŒฟ ½ tsp Gelatin Powder
๐ŸŒฟ ½ tsp Agar Powder
๐ŸŒฟ 100g Oregon & Washington Blueberries
๐ŸŒฟ 40g White Sugar

Methods:

Make Crumb Base
1. Place oatmeal crackers in a food processor and blend until they become coarse sand texture.
2. Pour in the melted butter and continue to blend until fine crumbs.
3. Transfer the crumbs to the prepared pan and press with a spoon to form an even layer of crumbs.
4. Place the pan into a fridge and let it refrigerate for 30 minutes.

Make Cream Cheese Filling
5. Pour 80ml of water to the gelatin powder in a bowl and let soak for 5-10 minutes. Meanwhile, juice the lemon.
6. Place the Oregon-Washington blueberries, lemon juice and sugar in a pot. Cook over a medium heat for 10 minutes, stir frequently and let cool to room temperature after that.
7. Meanwhile, whisk together cream cheese and plain yoghurt until smooth and fluffy.
8. Pour the blueberries compote into a food processor and blend until it turns into a smooth puree.
9. Fold the blueberries puree into the cream cheese mixture.
10. Microwave the soaked gelatin for 30 seconds until melted.
11. Stir the melted gelatin into the blueberries cream cheese mixture.
12. Take the pan out from the refrigerator and pour mixture over crumbs until the pan is ¾ filled.
13. Return the pan to the refrigerator for another 1 hour until the cream cheese filling is set.

Make Top Jelly Layer
14. Pour 200ml water into a pan, followed by ½ tsp gelatin powder, ½ tsp agar powder and 40g of sugar.
15. Cook over medium fire, stir frequently until all sugar is dissolved and no lumps of gelatin remain. After that let cool to room temperature.
16. Take the pan out from the refrigerator, place fresh blueberries on the set cream cheese fillings in a single layer.
17. Pour the clear agar solution and top up the remaining ¼ of the pan. 
18. Return to the refrigerator for another 1 hour until the top agar layer is set.
19. It's ready to serve!

1. One cup (148g) of blueberries contributes 25% of your daily value of vitamin C, 14.4 milligrams of vitamin C.

๐Ÿ€ Vitamin C is a water-soluble vitamin that acts as an antioxidant stabilizing free radicals, thus helping to prevent cellular damage.
๐Ÿ€ Vitamin C aids in collagen production, assists with iron absorption, helps to heal wounds and to keep your gums healthy.

2. One cup (148g) of blueberries contains 3.6g fibre, equivalent to 14% of your daily fibre requirement.

๐Ÿ€ Dietary fibre has been shown to provide numerous health benefits, including improving blood lipid levels, regulating blood glucose, and increasing satiety (makes you feel full longer), which may help with weight loss.
