Recipe: Natural Delights Medjool Dates Pistachios Energy Balls

Charlotte's Kitchen is delightful to discover a new recipe, as usual, Charlotte's favourite way of easy preparation yet with full nutritious value. Today's recipe is Medjool Dates Pistachios Energy Balls, using Natural Delights Medjool Dates and recipe by Dietitian Georgen Thye


Dates are in fact a versatile food, we can enjoy as it is - a snack or incorporate into various recipes in our daily cooking. They are widely used in salads, baked items, desserts, smoothies and others. Besides becoming the main choice of food during Ramadan and serves as tasty gift items for festive seasons, dates are versatile to enjoy all year round, they are a convenient fruit to visually enhance and energise any meal.


Whenever I am on-the-go, I will look for a nourishing choice that is convenient to eat. Dates are one of my favourite choices as dates are nutrient dense with 16 essential vitamins and minerals. It provides satisfying, energizing snack for our busy days. Dates are high in calories particularly carbohydrates (74 grams) for the energy we needed especially during a busy day. Besides that, dates are high in natural fibre, with nearly 8g of fibre in 100g of dates. The natural fibre helps to regularise bowel movements, ease constipation and improve overall digestive health.

Recipe: Medjool Dates Pistachios Energy Balls

Ingredients:

10 Natural Delights Medjool Dates, pitted
1/2 cup shelled pistachios
1/4 cup dried coconut shreds, for coating

Methods:

1. In a food processor, pulse the dates and pistachios until the mixture is well combined and the pistachios are chopped into small pieces.
2. Using your hands, roll the mixture into small balls, about 1 inch in diameter.
3. Roll each ball in the dried coconut shreds, making sure they are well coated.
4. Place the energy balls in the refrigerator for at least 30 minutes to firm up before serving.
